Favorite Paleo Banana Bread

What I miss most on the Paleo diet are baked goods! I’ve tried countless recipes for Paleo Banana Bread and finally found one I love. The texture is perfect and its easy to modify if you want to mix it up a bit. Hope you enjoy it!

Ingredients:

Dry:

1 Cup Almond Meal (I found mine at Trader Joe’s)
1 Cup Tapioca Flour / Starch (You can get a really good deal on this at Jay’s International Market on Grand Ave)
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1 tsp Nutmeg

Wet:

2 Eggs
2 Ripe Bananas (mashed)
1/2 Cup Unsweeted Applesauce
A splash of vanilla flavoring
Honey – sweeten as much or as little as you want. I use about 3 tablespoons

Optional:

Nuts (try walnuts, pecans, or almonds)
Unsweetened coconut flakes (you can also find this at Trader Joe’s and Jay’s International Market)

Instructions

Mix Dry ingredients together. Whisk wet ingredients together. Combine everything. Stir in nuts and coconut flakes. Bake at 350 for about 50 minutes or until you knife comes out clean. That’s it! I enjoy it with Aldi’s Coconut Spread on top and a cup of tea.
